This one-day lecture course presents an overview of how GC and HPLC techniques can be applied to food and flavor analysis. The fundamentals of food chemistry are presented, and the use of GC and HPLC methods based on the chemical properties of food components are discussed. This course is designed for analysts who work with food and flavor systems, as well as food chemists who use analytical data for product and process development.
